Yesterday I wanted to whip up a batch of our favorite no-bake cookies for a MIRLing picnic with my new friends Jody and Martha. I lost 20 minutes searching through 4 recipe boxes (this is what happens when kids get old enough to cook independently), all to no avail.
Since I couldn’t find my own recipe, I found a very similar one and modified it to the best of my memory. Now I’m posting it for posterity in the hopes that Blogger will prove more reliable than either my recipe box or my memory.
I’ve heard that recipes like this are very touchy and often turn out goopy but we haven’t found that to be the case. Just be sure you boil at least 2 minutes (some recipes say 4 minutes) and your cookies should firm up nicely.

Oatmeal Chocolate No-bake Cookies

2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/2 cup butter
1/2 cup peanut butter
1 tsp. vanilla
4-5 cups oats

In a 4 quart pot, stir together sugar and cocoa. Add milk. Bring to a boil over medium heat and boil 2 minutes.
Working quickly, remove from heat and stir in butter, peanut butter and vanilla. Confession: I never measure peanut butter. 1-2 big glops from a spoon will do nicely. Stir in the oats and drop by teaspoonfuls onto waxed paper. Remember, work quickly. If you are too slow your cookies will cool and set in the pan and you’ll be forced to eat the rest straight from the pan with a spoon. Not good for the hips.
Let cool thoroughly and enjoy.

We had wonderful visit with our new friends and afterwards went to Vision Forum to help out with a project. When everyone told me I had a beautiful glow to my skin, I smiled and assumed it was from the joy of making and meeting new friends. I only wish that was the cause.
Nope.
Yesterday was a beautiful sunny day and we spent 3 hours in a river park with our friends.
I have a sunburn.

    We love these too and it’s one of the few cookies that all the ingrediants can be found here in Romania. Although we do bring back several pounds of brown sugar with us! Can you imagine living without brown sugar?!?

    Isn’t it amazing how you can’t mention a glow without people thinking your that way again and even craving chocolate but no pickles.
    I love no bakes and I used to have to make them for my grandchildren’s bake sales at school.

  6. My sister makes these all the time–I love them but never make them–hmm, why is that. I may make some tomorrow afternoon! I was finally able to find peanut butter on the shelf again!

    Did you use Quick Oats for the No-bake cookies? I think I used the old-fashioned once and they didn’t turn out. Maybe I should have boiled them longer?

    I use old-fashioned oats for mine, but maybe you’ve hit upon the problem.
    I’ll bet 1 minute of boiling would do it if you use quick oats, while 2-4 minutes might be necessary for old-fashioned oats.
    Does anyone care to chime in on that theory?

  9. No need to use peanut butter. I’ve been makeing these for ever; without. sometimes i add 1/2 cup coconut which is nice. 2c sugar, 1/4 cup cocoa, 1/4 cup butter, 1/2 cup milk, 1/2 tsp vanilla
